Measurements

Cup measurements are really hard to quantify, I have a romantic idea of the Pioneer cooks crossing America in their wagons, with only a cup to measure ingredients. Every cup might have been a different size, but as long as you used the same one to measure everything, the ingredients were in the correct proportions.

In the US and Australia, ingredients are measured by volume, in cups. US cups are smaller than Australian cups.  In the UK and Europe, ingredients are measured by weight, in grams or ounces.

It is very hard to give accurate weights for cup measurements but, as a general rule, if you use the same measure for all the ingredients in the recipe, you should get it right!  A coffee mug holds more than a teacup, but it is all about the proportion of one ingredient to another in a recipe.
